Ingredients
Salad
- 1 (20 oz) package refrigerated cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cucumber, peeled and sliced
- ½ red onion, thinly sliced
- 1 cup pitted kalamata olives
- ½ cup chopped salami or pepperoni
- ½ cup grated parmesan cheese
- 1 cup baby spinach
- 1 cup arugula
Dressing
- ½ cup olive oil
- ½ cup red wine vinegar
- 1 tbsp Dijon mustard
- 1 tsp honey
- 1 clove garlic, minced
Directions
- Cook tortellini according to package directions. Drain and rinse under cold water, then transfer to a large bowl.
- In a separate bowl, whisk together all dressing ingredients.
- Pour half of the dressing over the tortellini.
- Add all remaining salad ingredients to the bowl and pour the remaining dressing over the top.
- Gently toss to combine. Cover and refrigerate for one hour before serving.
